- Heat the Olive Oil in a large non-stick pan over medium heat for about 2 minutes until shimmering.
- Add the chopped onion and minced garlic to the pan, sautéing for 3–4 minutes until soft and translucent.
- Introduce the crumbled Mexican chorizo to the pan, cooking for about 5–7 minutes until fully browned and fragrant.
- Mix in the chopped dried apricots and chili flakes, continuing to cook for another 2–3 minutes.
- Sprinkle in the dried oregano and stir well, allowing the mixture to cook for another 2 minutes.
- Bring a pot of salted water to a rapid boil. Add the turmeric pasta, cooking according to package instructions for about 8–10 minutes.
- Once the pasta is ready, drain it and return it to the pot. Drizzle with olive oil and toss in a pinch of turmeric.
