Ingredients
  

For the Pasta Salad
  • 8 ounces Bow Tie Pasta Can substitute with macaroni or penne
  • 1 pound Peeled and Deveined Cooked Shrimp Fresh or frozen
  • 1 cup Marinated Artichoke Hearts Canned artichokes can work
  • 1/2 cup Sliced Ripe Olives Can substitute with black olives
  • 1/2 cup Crumbled Feta Cheese Goat cheese is an alternative
  • 2 stalks Green Onions Regular onions can be used
  • 1/4 cup Fresh Parsley Dried parsley works in lesser amount
  • 1/4 cup Fresh Basil Dried basil can substitute in reduced quantity
For the Dressing
  • 2 tablespoons White Wine Vinegar Apple cider vinegar is a good alternative
  • 1/4 cup Olive Oil Neutral oil can be used
  • 2 tablespoons Lemon Juice Can replace with lime juice
  • 1 teaspoon Dijon Mustard Optional for emulsifying dressing
  • to taste Fresh Ground Pepper Optional seasoning

Method
 

Preparation Steps
  1. Boil a large pot of salted water over high heat. Add the bow tie pasta and cook until al dente, about 8-10 minutes. Drain and rinse under cold water.
  2. In a large mixing bowl, combine the cooled pasta, shrimp, artichoke hearts, olives, feta, green onions, parsley, and basil. Gently mix.
  3. In a separate bowl, whisk together white wine vinegar, olive oil, lemon juice, Dijon mustard, and pepper until emulsified.
  4. Pour dressing over the pasta mixture and toss gently to coat ingredients without breaking up the shrimp or pasta.
  5. Cover and chill in the refrigerator for at least 2 hours before serving.
