Method
 

Cooking Steps
  1. In a non-stick skillet, melt 1-2 tablespoons of butter over medium heat until foamy.
  2. Whisk together 4-6 eggs with garlic powder, cayenne pepper, salt, and black pepper until combined. Pour into the skillet and continuously stir until fluffy, about 3-4 minutes.
  3. Mix roasted or pan-fried potatoes into the scrambled eggs for added heartiness.
  4. Warm flour tortillas in a dry skillet over low heat for about 10-20 seconds each side.
  5. Lay a warm tortilla flat, evenly distribute scrambled eggs, crispy bacon or sausage, and grated cheese down the center.
  6. Fold the sides of the tortilla inward and roll tightly away from you.
  7. Cook the burritos seam side down in the skillet for 2-3 minutes on each side until golden brown.
