- Whisk together 4-6 eggs with garlic powder, cayenne pepper, salt, and black pepper until combined. Pour into the skillet and continuously stir until fluffy, about 3-4 minutes.
- Mix roasted or pan-fried potatoes into the scrambled eggs for added heartiness.
- Warm flour tortillas in a dry skillet over low heat for about 10-20 seconds each side.
- Lay a warm tortilla flat, evenly distribute scrambled eggs, crispy bacon or sausage, and grated cheese down the center.
- Fold the sides of the tortilla inward and roll tightly away from you.
- Cook the burritos seam side down in the skillet for 2-3 minutes on each side until golden brown.
- Serve hot with a dollop of sour cream and salsa on the side.
