Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lay out your bacon strips in a single layer. Bake for 15-20 minutes or until crispy, turning halfway to ensure even cooking.
  2. Once done, remove the bacon and let it cool on a paper towel-lined plate.
  3. Chop the cooled bacon into small, bite-sized pieces.
  4. In a large mixing bowl, add softened goat cheese and mix until creamy and smooth. Fold in the chopped bacon pieces.
  5. Transfer the cheese and bacon mixture onto a sheet of plastic wrap and shape into a log about 8-10 inches long. Wrap tightly and refrigerate for at least 30 minutes.
  6. Unwrap the cheese log and transfer it to a serving platter. Drizzle hot honey over the top.
