- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lay out your bacon strips in a single layer. Bake for 15-20 minutes or until crispy.
- Once done, remove the bacon and let it cool on a paper towel-lined plate.
- Chop the cooled bacon into small, bite-sized pieces and set aside.
- In a mixing bowl, add softened goat cheese and mix until creamy, about 1-2 minutes. Gently fold in the chopped bacon pieces.
- Shape the mixture into a log about 8-10 inches long using plastic wrap. Refrigerate for at least 30 minutes.
- After chilling, unwrap the log and drizzle hot honey over the top.
- Arrange toasted crostini around the cheese log and serve with extra hot honey on the side.
