  • 1 medium Red Bell Pepper can be swapped for yellow or green bell peppers
  • 1 medium Red Onion yellow onion can soften the taste
  • 2 cloves Garlic (minced) fresh cloves are best
  • 4 cups Baby Spinach kale can be a substitute
For the Feta and Seasoning
  • 8 oz Feta Cheese goat cheese can be a milder alternative
  • 2 tablespoons Olive Oil extra virgin olive oil is preferred
  • 1 teaspoon Dried Oregano fresh oregano can be used, adjust quantity
  • 1/2 teaspoon Dried Thyme fresh thyme can enhance aroma
  • 1/4 teaspoon Ground Black Pepper omit for a milder dish
  • 1/4 teaspoon Red Pepper Flakes optional for spice
For the Eggs
  • 4 large Eggs look for eggs with firm whites and runny yolks
Optional Topping
  • 1/4 cup Fresh Basil or Chives for garnish

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C) and gather your ingredients.
  2. Distribute cherry tomatoes, diced red bell pepper, red onion, and minced garlic in baking dishes, adding feta.
  3. Drizzle with olive oil and sprinkle with dried oregano, thyme, black pepper, and red pepper flakes.
  4. Bake for about 25 minutes until vegetables are tender and feta softens.
  5. Stir the mixture, add baby spinach and blend until slightly wilted.
  6. Create wells for eggs and crack the eggs into each well.
  7. Return to oven and bake for an additional 10 minutes, until egg whites set and yolks are runny.
  8. Garnish with fresh herbs and serve immediately.
