Method
 

Preparation Instructions
  1. Preheat your oven to 200°C (390°F).
  2. Wash and cube the potatoes into bite-sized pieces, then par-boil for 6 to 10 minutes.
  3. Transfer potatoes to a baking dish, drizzle with olive oil, and season with thyme, oregano, salt, and pepper. Toss to coat.
  4. Peel the head of garlic, wrap it in foil drizzled with olive oil, and place it in the baking dish with the potatoes.
  5. Roast for 30 to 40 minutes until golden and crispy, checking for tenderness.
  6. Crumble feta over the potatoes and squeeze the juice of half a lemon on top. Return to the oven for another 15 minutes.
  7. Unwrap the roasted garlic, mash it and mix with the feta and remaining lemon juice.
  8. Toss the roasted potatoes with the garlic-feta mixture and garnish with basil and optional honey and chili flakes.
  9. Serve warm or at room temperature.
