- Preheat your oven to 200°C (390°F).
- Wash and cube the potatoes into bite-sized pieces, then par-boil for 6 to 10 minutes.
- Transfer potatoes to a baking dish, drizzle with olive oil, and season with thyme, oregano, salt, and pepper. Toss to coat.
- Peel the head of garlic, wrap it in foil drizzled with olive oil, and place it in the baking dish with the potatoes.
- Roast for 30 to 40 minutes until golden and crispy, checking for tenderness.
- Crumble feta over the potatoes and squeeze the juice of half a lemon on top. Return to the oven for another 15 minutes.
- Unwrap the roasted garlic, mash it and mix with the feta and remaining lemon juice.
- Toss the roasted potatoes with the garlic-feta mixture and garnish with basil and optional honey and chili flakes.
- Serve warm or at room temperature.
