Preparation Steps
- Preheat your oven to 400°F (204°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds.
- Sprinkle the inside of each half with salt to enhance flavor.
- Place the squash halves cut-side down on a baking tray lined with parchment paper and bake for 30 to 35 minutes.
- After baking, let the squash cool for about 10 minutes.
- Use a fork to scrape the inside of each half to create spaghetti-like strands.
- In a mixing bowl, combine shredded chicken with BBQ sauce and optional vegetables.
- Stuff each squash half with the BBQ chicken mixture and top with cheese.
- Return to the oven for 10 to 15 minutes until the cheese is melted and bubbly.
- Allow to cool slightly before serving.

Store leftovers in an airtight container for up to 3 days. Can also be wrapped tightly and frozen for up to 3 months.
