Method
 

Preparation Steps
  1. Preheat your oven to 400°F (204°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  2. Sprinkle the inside of each half with salt to enhance flavor.
  3. Place the squash halves cut-side down on a baking tray lined with parchment paper and bake for 30 to 35 minutes.
  4. After baking, let the squash cool for about 10 minutes.
  5. Use a fork to scrape the inside of each half to create spaghetti-like strands.
  6. In a mixing bowl, combine shredded chicken with BBQ sauce and optional vegetables.
  7. Stuff each squash half with the BBQ chicken mixture and top with cheese.
  8. Return to the oven for 10 to 15 minutes until the cheese is melted and bubbly.
  9. Allow to cool slightly before serving.
