Step-by-Step Instructions for Quick and Lemony Tuscan White Bean Dip
  1. Heat 1 tablespoon of olive oil in a medium pan over low heat. Add the minced garlic and sauté for about 2-3 minutes until fragrant and softened, but not browned.
  2. Add the chopped thyme, lemon zest, and most of the drained cannellini beans to the pan, reserving about 1/4 cup of the beans. Sauté for an additional 2-3 minutes.
  3. Transfer the sautéed mixture into a food processor. Add 1 tablespoon of fresh lemon juice, the remaining olive oil, and 1/4 cup of reserved bean liquid. Process until smooth.
  4. Taste your dip and season with kosher salt and black pepper as desired. Stir well to incorporate all the seasonings.
  5. Spoon the dip into a serving bowl, topping it off with the reserved beans, fresh parsley, and a drizzle of olive oil.
