Method
 

Cooking Instructions
  1. Preheat your oven to 350°F (175°C) and spray the muffin tin with non-stick cooking spray.
  2. Chop the fresh vegetables and cook bacon or sausage if using.
  3. In a medium mixing bowl, whisk together the eggs and milk or cream, and season with salt and pepper.
  4. Fill each muffin tin cavity halfway with a mix of chopped vegetables, bacon or sausage, and cheese.
  5. Pour the egg mixture into each muffin cavity, filling them about 3/4 full.
  6. Bake for 12-18 minutes until puffed and golden. A toothpick should come out clean.
  7. Cool for a few minutes, then use a silicone spatula to gently lift each egg bite out and serve warm.
