- Preheat your oven to 350°F (175°C) and spray the muffin tin with non-stick cooking spray.
- Chop the fresh vegetables and cook bacon or sausage if using.
- In a medium mixing bowl, whisk together the eggs and milk or cream, and season with salt and pepper.
- Fill each muffin tin cavity halfway with a mix of chopped vegetables, bacon or sausage, and cheese.
- Pour the egg mixture into each muffin cavity, filling them about 3/4 full.
- Bake for 12-18 minutes until puffed and golden. A toothpick should come out clean.
- Cool for a few minutes, then use a silicone spatula to gently lift each egg bite out and serve warm.
