  • 1.5 tablespoons Olive Oil A versatile cooking fat; feel free to substitute with any neutral oil or butter.
For the Citrus Basil Butter Sauce
  • 3 oranges Oranges Zest and juice provide a refreshing citrus kick.
  • 2 tablespoons Butter Adds richness; dairy-free alternative available.
  • 4 cloves Garlic Minced, enhances the sauce’s flavor.
  • 1 teaspoon Honey Offers a touch of sweetness.
  • 0.5 cups Basil Leaves Provides fresh flavor; Thai basil adds an exotic twist.
  • Salt Essential seasoning.
  • Pepper Essential seasoning.

Method
 

Instructions
  1. In a medium bowl, whisk together 1.5 tablespoons of olive oil, the zest and juice of one orange, and a pinch of salt. Add the bhetki fish fillets and coat them in the marinade. Let rest for 10 minutes.
  2. Heat a non-stick pan over medium-high heat, add remaining olive oil, and cook the marinated fish for 3-4 minutes on each side until golden brown and flaky.
  3. In the same pan on low heat, add 2 tablespoons of butter. Once melted, add minced garlic and sauté for 1-2 minutes until fragrant but not browned.
  4. Pour juice from the remaining two oranges into the pan with garlic and add 1 teaspoon of honey. Whisk for 2-3 minutes until slightly thickened. Season with salt and pepper.
  5. Stir in torn basil leaves and return cooked fish to the pan, spooning sauce over. Cover and let rest for another 3-4 minutes.
  6. Serve the bhetki fish with citrus basil butter sauce drizzled over it. Enjoy with fresh salad or crusty bread.
