- In a medium bowl, whisk together 1.5 tablespoons of olive oil, the zest and juice of one orange, and a pinch of salt. Add the bhetki fish fillets and coat them in the marinade. Let rest for 10 minutes.
- Heat a non-stick pan over medium-high heat, add remaining olive oil, and cook the marinated fish for 3-4 minutes on each side until golden brown and flaky.
- In the same pan on low heat, add 2 tablespoons of butter. Once melted, add minced garlic and sauté for 1-2 minutes until fragrant but not browned.
- Pour juice from the remaining two oranges into the pan with garlic and add 1 teaspoon of honey. Whisk for 2-3 minutes until slightly thickened. Season with salt and pepper.
- Stir in torn basil leaves and return cooked fish to the pan, spooning sauce over. Cover and let rest for another 3-4 minutes.
- Serve the bhetki fish with citrus basil butter sauce drizzled over it. Enjoy with fresh salad or crusty bread.
