  • 1 tablespoon Honey or maple syrup
  • 150 grams Blue Cheese or goat cheese
  • 50 grams Parmesan Cheese grated; can substitute with Pecorino
  • 100 grams Walnuts chopped; pecans can be used as an alternative
  • 1 tablespoon Fresh Thyme or 1 teaspoon dried thyme
  • 1 tablespoon Milk or non-dairy milk
  • to taste Sea Salt
  • to taste Cracked Pepper

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 180°C (350°F) for fan-forced ovens or 200°C (390°F) for non-fan ovens.
  2. Lay out the sheets of puff pastry on a clean surface and drizzle honey over each sheet.
  3. Sprinkle blue cheese, followed by grated Parmesan, walnuts, and thyme evenly over the pastry. Season with sea salt and cracked pepper.
  4. Roll the pastry sheet tightly from one end to create a log shape, and then cut each log in half lengthwise.
  5. Twist each pastry half gently to create a corkscrew effect and coil each piece into a circular shape. Brush generously with milk.
  6. Place the baking tray in the oven and bake the twirls for 25-30 minutes, until golden brown.
  7. Remove from oven, garnish with fresh thyme, and serve warm.
