- Preheat your oven to 180°C (350°F) for fan-forced ovens or 200°C (390°F) for non-fan ovens.
- Lay out the sheets of puff pastry on a clean surface and drizzle honey over each sheet.
- Sprinkle blue cheese, followed by grated Parmesan, walnuts, and thyme evenly over the pastry. Season with sea salt and cracked pepper.
- Roll the pastry sheet tightly from one end to create a log shape, and then cut each log in half lengthwise.
- Twist each pastry half gently to create a corkscrew effect and coil each piece into a circular shape. Brush generously with milk.
- Place the baking tray in the oven and bake the twirls for 25-30 minutes, until golden brown.
- Remove from oven, garnish with fresh thyme, and serve warm.
