  • 4 large Egg Yolks Consider using pasteurized eggs
  • 1 cup Light Brown Sugar
  • 200 grams Unsalted Butter Room temperature
  • 1 cup Sweetened Coffee Adjust the sweetness as desired
For Garnish
  • ½ cup Crushed Maria Cookies Optional decoration

Method
 

Preparation Steps
  1. Cream the room temperature unsalted butter and light brown sugar for 3-4 minutes until creamy and fluffy.
  2. Slowly mix in 1-2 tablespoons of sweetened coffee into the creamed butter and sugar, beating until combined.
  3. Incorporate the egg yolks one at a time, mixing on low speed after each addition for about 30 seconds.
  4. Soak 7 Maria biscuits quickly in sweetened coffee for 1-2 seconds on each side.
  5. Layer 6 soaked Maria biscuits in a circle on a platter, spread buttercream over, and repeat layering until completed.
  6. Spread remaining buttercream over the top and sides of the cake evenly.
  7. Chill the assembled cake in the refrigerator for a minimum of 2 hours.
  8. Optionally garnish with crushed Maria cookies before serving.
