- Preheat the oven to 400°F (200°C) and grease a baking dish with olive oil.
- Pat cod fillets dry and season with salt and black pepper.
- Whisk together olive oil, lemon juice, and Dijon mustard in a mixing bowl. Add minced garlic, Parmesan, panko, parsley, and smoked paprika, mixing until crumbly.
- Lay the seasoned cod fillets in the baking dish, covering them with the breadcrumb mixture.
- Bake for 12-15 minutes until the fish flakes easily with a fork and the topping is golden.
- Remove from oven and let sit before serving, optionally garnishing with lemon wedges.
