Method
 

Step-by-Step Instructions
  1. Combine pitted and chopped cherries with sugar and brandy. Refrigerate for at least 12 hours.
  2. In a saucepan, heat cream, milk, sugar, and salt. Whisk egg yolks, temper with cream, then return to pan and cook until thickened.
  3. Cool the mixture for about 30 minutes, then refrigerate for at least 4 hours.
  4. Stir in the marinated cherries, then churn in an ice cream maker according to manufacturer's instructions, adding chocolate chunks in the last minute.
  5. Transfer to an airtight container and freeze for at least 2 hours before serving.
