  • 1 cup Quinoa Rinse thoroughly before cooking to remove bitterness.
  • 1 can Chickpeas Drained and rinsed.
  • 1 large Cucumber Diced, English cucumbers recommended for fewer seeds.
  • 1 large Bell Pepper Any color will work.
  • 0.5 medium Red Onion Finely chopped, red onion recommended for sweetness.
  • 1 handful Parsley Chopped, can substitute with cilantro.
For the Dressing
  • 0.25 cup Olive Oil Can substitute with avocado oil.
  • 1 large Lemon Juice Juice of 1 lemon.
  • 2 tablespoons Vinegar Can use apple cider vinegar or balsamic.
  • 1 clove Garlic Minced, use fresh for best results.

Method
 

Step-by-Step Instructions
  1. Rinse quinoa under cold running water. Combine rinsed quinoa and water in a medium saucepan, bring to a boil, reduce heat to low, cover and simmer for 15 minutes.
  2. Remove from heat and let it covered rest for 5 minutes, then fluff with a fork and let it cool.
  3. In a large bowl, combine chickpeas, cucumber, bell pepper, onion, and parsley.
  4. In a small bowl, whisk olive oil, lemon juice, vinegar, garlic, salt, and pepper. Set aside.
  5. Add the cooled quinoa to the bowl of vegetables, drizzle dressing, and mix gently until combined.
  6. Cover and let the salad sit for 5–10 minutes to meld flavors.

Notes
