Step-by-Step Instructions
  1. Make the Blueberry Compote: Place blueberries in a saucepan over medium heat with sugar and water, simmer for 5–7 minutes. Stir in cornstarch slurry and cook for 2 more minutes until thickened.
  2. Prepare Cookie Dough: Melt butter in a saucepan until golden brown. Whisk with sugars, then add eggs and vanilla until combined.
  3. Combine Dry Ingredients: Sift flour, cornstarch, baking powder, salt, and cinnamon in another bowl, then mix into the wet ingredients gently.
  4. Shape and Chill Cookie Dough: Scoop dough into balls, fill with blueberry compote, place on a baking sheet, and chill for at least 2 hours.
  5. Make the Streusel Topping: Mix brown sugar, flour, cinnamon, and salt, then cut in cold butter until crumbs form.
