Step-by-Step Instructions for Buffalo Chicken Zucchini Boats
  1. Preheat your oven to 400°F (200°C).
  2. Slice the zucchini in half lengthwise and scoop out the insides to create a hollow space for filling. Arrange in a greased 9x13 baking dish, cut side up.
  3. Cook ground chicken in a medium skillet over medium heat until browned, about 6-8 minutes. Stir in buffalo wing sauce and ranch seasoning.
  4. Stuff each zucchini half with the buffalo chicken filling and top with shredded mozzarella cheese.
  5. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 5 minutes until the cheese is bubbly.
