For the Casserole
  • 1 pound Breakfast Sausage Feel free to substitute with diced ham or turkey sausage
  • 2 cups Fresh Spinach Can be swapped for kale or omitted
  • 1 cup Diced Onion Any sweet onion variety works
  • 1 cup Diced Red Bell Pepper Replace with other peppers or tomatoes
  • 2 cups Shredded Cheddar Cheese Try Monterey Jack or mozzarella for a change
  • 8 large Large Eggs
  • 1 cup Heavy Cream Milk or half-and-half can work in a pinch
  • 1 teaspoon Garlic Powder Fresh garlic can replace it
  • 1 teaspoon Onion Powder Can be omitted if using fresh onion
  • to taste Salt & Pepper Essential for seasoning

Method
 

Cooking Instructions
  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet over medium heat, cook the breakfast sausage until fully browned. Add fresh spinach and cook until wilted.
  3. Transfer the sausage and spinach mixture to a greased 13x9" casserole dish.
  4. Evenly layer the diced onion and red bell pepper over the mixture, then sprinkle the shredded cheddar cheese on top.
  5. In a mixing bowl, whisk together eggs, heavy cream, garlic powder, onion powder, and salt and pepper. Pour over the layered ingredients in the dish.
  6. Cover the dish with aluminum foil and bake for 45 minutes. Remove the foil and bake for an additional 15 minutes until golden brown.
  7. Let the casserole cool for 5 to 10 minutes before slicing and serving.
