Baking Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.
- In another bowl, combine the milk, vegetable oil, large egg, and vanilla extract. Whisk until smooth.
- Gently fold the wet mixture into the dry ingredients, stirring just until combined.
- Fold in the fresh or thawed cherries gently without crushing them.
- Fill each muffin cup about 2/3 full with the batter.
- In a separate bowl, mix together brown sugar, ground cinnamon, and cold unsalted butter until crumbly.
- Sprinkle the topping evenly over each muffin cup.
- Bake for about 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the pan for about 5 minutes before transferring them to a wire rack.
