Method
 

Instructions
  1. In a large mixing bowl, combine melted butter, granulated sugar, and brown sugar. Beat until light and fluffy, about 2-3 minutes.
  2. Add eggs and vanilla extract to the mixture. Mix on low speed until fully combined and smooth, about 1-2 minutes.
  3. In a separate bowl, sift together flour, cinnamon, cornstarch, baking soda, and baking powder. Gradually add to wet ingredients, stirring until just combined.
  4. Fold in chopped and toasted pecans and optional toffee bits if using.
  5. Cover the bowl with plastic wrap and refrigerate the dough for 30-45 minutes.
  6. Once chilled, shape the dough into 1.5-inch balls and roll in granulated sugar if desired.
  7. Bake in the preheated oven at 350°F for 11-14 minutes until edges are golden.
  8. Cool on the tray for 5 minutes, then transfer to wire racks to cool completely.
