- In a large mixing bowl, combine melted butter, granulated sugar, and brown sugar. Beat until light and fluffy, about 2-3 minutes.
- Add eggs and vanilla extract to the mixture. Mix on low speed until fully combined and smooth, about 1-2 minutes.
- In a separate bowl, sift together flour, cinnamon, cornstarch, baking soda, and baking powder. Gradually add to wet ingredients, stirring until just combined.
- Fold in chopped and toasted pecans and optional toffee bits if using.
- Cover the bowl with plastic wrap and refrigerate the dough for 30-45 minutes.
- Once chilled, shape the dough into 1.5-inch balls and roll in granulated sugar if desired.
- Bake in the preheated oven at 350°F for 11-14 minutes until edges are golden.
- Cool on the tray for 5 minutes, then transfer to wire racks to cool completely.
