Step-by-Step Instructions for Oatmeal Cookie Bars
  1. Preheat your oven to 350°F (175°C) and gather your baking equipment.
  2. Mash 2 ripe bananas in a large bowl until smooth.
  3. Add 2 free-range eggs and 1 teaspoon of vanilla to the bananas; mix well.
  4. Melt ½ cup of butter and stir into the banana mixture.
  5. Combine ¼ cup of honey, 1 teaspoon of cinnamon, and ½ teaspoon of baking soda; mix thoroughly.
  6. Fold in 4 cups of rolled oats and ensure they are well coated.
  7. Gently mix in 1 cup of chocolate chips.
  8. Line an 8"x8" baking dish with parchment paper and pour the mixture into it.
  9. Sprinkle additional chocolate chips on top and gently press them in.
  10. Bake in the preheated oven for 30 minutes; they should be golden brown.
  11. Cool the bars in the dish for 30 minutes before slicing into squares.
  12. Lift the bars using parchment and slice into 16 squares.
