  • 2 large Eggs for binding
  • 1 cup Peanut Butter smooth or crunchy
For the Mix-ins
  • 1 cup Peanuts optional
  • 1 cup Chocolate Chunks dark, milk or white
For the Drizzle
  • 1 cup Milk Chocolate can use dark chocolate

Step-by-Step Instructions
  1. Preheat your oven to 360°F (180°C) and line two large baking trays with parchment paper.
  2. In a stand mixer, cream together softened unsalted butter and icing sugar on medium speed for about 5 minutes.
  3. Combine all-purpose flour, baking powder, and salt in a separate bowl and sift to eliminate lumps.
  4. Gradually add the dry ingredients to the creamed butter mixture until crumbly.
  5. Add eggs and peanut butter, mixing on low speed until a smooth dough forms.
  6. Gently fold in chopped peanuts and chocolate chunks using a wooden spoon.
  7. Using an ice cream scoop, portion out dough onto baking trays and flatten slightly.
  8. Bake the cookies for about 20 minutes until golden at the edges and soft in the center.
  9. Melt milk chocolate in a double boiler and drizzle over cooled cookies for decoration.
