- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

- Mix in the room temperature egg yolks and vanilla extract until well combined and fluffy.
- Add creamy peanut butter and mix until everything is smooth and combined.
- In a separate bowl, whisk together all-purpose flour, baking soda, baking powder, and salt. Gradually fold the dry mixture into the wet ingredients until just combined.
- Form dough balls about 1-2 inches in size and place them onto the prepared baking sheets, leaving space between each ball.
- Bake for 10-11 minutes, checking for a puffed shape and slight browning at the edges.
- After baking, let the cookies cool on the baking sheets for about 5 minutes before transferring to a wire rack.
