  2. In a large pot, bring salted water to a boil. Add pasta and cook according to package instructions, typically 8-10 minutes. Drain and drizzle with olive oil.
  3. Whisk together tahini, plant-based yogurt, lemon juice, apple cider vinegar, Dijon mustard, and dill until smooth, then gradually add water to reach desired consistency.
  4. Combine cooled pasta, diced cucumber, halved tomatoes, and roasted chickpeas in a bowl. Pour dressing over and toss gently.
  5. Serve immediately or refrigerate in an airtight container for up to 3 days.
