Step-by-Step Instructions
  1. In a large sauté pan over medium heat, add the ground beef along with finely chopped onions and minced garlic. Cook for about 10 minutes until the beef is browned and the onions are translucent.
  2. While the beef mixture cooks, whisk together the canned coconut milk, tapioca flour, nutritional yeast, chili powder, salt, and paprika in a medium bowl until smooth.
  3. Once the beef is cooked, add the Rotel tomatoes and the coconut milk mixture to the pan. Stir to combine all ingredients.
  4. Bring the mixture to a gentle boil, reduce the heat to low, and let it simmer for 10-12 minutes, stirring regularly until thickened.
  5. Remove from heat, serve warm with your choice of chips or veggie sticks.
