Step-by-Step Instructions
  1. Wash apricots, slice them in half, and remove pits. Combine apricots, sparkling wine, and water in a medium saucepan. Add sugar to taste.
  2. Bring the mixture to a gentle boil, then simmer uncovered for 10-15 minutes, stirring occasionally, until apricots are tender.
  3. Remove from heat and let it cool completely for about 30 minutes. Blend the mixture until smooth and creamy.
  4. If the puree is less than 4 cups, add more water to reach this measurement. Pour into a shallow baking dish.
  5. Freeze the mixture for at least 4 hours, until completely solid.
  6. Scoop the sorbet into serving glasses, garnish with apricot slices, and drizzle sparkling wine on top.
