Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and arrange the saltine crackers in a single layer.
  2. In a medium saucepan, melt the butter and brown sugar over medium heat, stirring constantly until bubbling. Boil for 3 minutes without stirring, then remove from heat and stir in vanilla.
  3. Pour the toffee mixture over the crackers, spreading it gently. Bake for 5 minutes until bubbly and golden.
  4. Remove from oven and immediately sprinkle cinnamon sugar mixture over the hot toffee, pressing it down with a spatula to help it adhere.
