- In a large skillet or saucepan, combine 2 cups of chicken broth (or vegetable broth), 1 cup of uncooked jasmine rice, ¼ teaspoon of salt, and 4 minced cloves of garlic. Bring to a rolling boil over medium-high heat.
- Once boiling, reduce heat to low, cover, and let it simmer gently for 15–20 minutes until the liquid is absorbed and rice is tender.
- Remove from heat and fluff the rice with a fork. Stir in 1 tablespoon of freshly squeezed lime juice, black beans, and chopped cilantro.
- Taste the dish and adjust flavors with more lime juice or salt as needed.
