  • 1 cup jasmine rice can substitute any rice that cooks in about 15 minutes
  • 0.25 teaspoon salt adjust quantity to taste
  • 4 cloves garlic (minced) fresh garlic recommended
For the Flavor
  • 1 tablespoon lime juice (freshly squeezed) adjust based on taste preference
  • 1 can black beans (canned, rinsed, and drained) homemade black beans can be used as substitution
  • 0.5 cup fresh cilantro (chopped) substitute with fresh parsley or basil if needed

Method
 

Cooking Instructions
  1. In a large skillet or saucepan, combine 2 cups of chicken broth (or vegetable broth), 1 cup of uncooked jasmine rice, ¼ teaspoon of salt, and 4 minced cloves of garlic. Bring to a rolling boil over medium-high heat.
  2. Once boiling, reduce heat to low, cover, and let it simmer gently for 15–20 minutes until the liquid is absorbed and rice is tender.
  3. Remove from heat and fluff the rice with a fork. Stir in 1 tablespoon of freshly squeezed lime juice, black beans, and chopped cilantro.
  4. Taste the dish and adjust flavors with more lime juice or salt as needed.
  5. Serve warm as a side or main dish, enjoying the vibrant flavors of the Cilantro-Lime Black Bean Rice.
