Step-by-Step Instructions
  1. Begin by washing and roughly chopping 1 cup of fresh cilantro, and juice 2 limes.
  2. Mince one garlic clove, and dice half of a ripe avocado, setting these ingredients aside.
  3. In a blender, add the chopped cilantro, lime juice, diced avocado, and minced garlic, along with olive oil, Greek yogurt, and honey.
  4. Blend everything on high until smooth for about 30-45 seconds.
  5. Taste and adjust seasoning with salt and pepper, adding 1-2 tablespoons of water if needed.
  6. Serve immediately over salads or tacos, or store in an airtight jar in the refrigerator.
