For the Crust
  • 1 cup Panko gluten-free if needed
  • 1 cup Shredded Unsweetened Coconut or sweetened
For the Binding
  • 3 tablespoons Mayonnaise for coating
  • 1 tablespoon Dijon Mustard or whole grain mustard
  • 1 teaspoon Salt to taste
  • 1 teaspoon Pepper to taste
For Garnish
  • 1 tablespoon Parsley optional

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a medium skillet, heat olive oil over medium heat and toast the panko breadcrumbs until golden brown, about 3-5 minutes.
  3. In the same skillet, toast the shredded coconut for 2-3 minutes until golden brown.
  4. In a bowl, combine mayonnaise and Dijon mustard, mixing well.
  5. Coat each salmon fillet with the mayonnaise mixture, then press into the panko-coconut mixture.
  6. Place coated salmon fillets on the prepared baking sheet and bake for 10-15 minutes until golden and cooked through.
  7. Let the salmon rest for a few minutes, garnish with parsley, and serve.
