Step‑by‑Step Instructions for One Pot Chicken Shorba
  1. Begin by cleaning and patting dry the chicken drumsticks. Make 2-3 cuts in each piece.
  2. Heat 2 tablespoons of vegetable refined oil in your pressure cooker over medium heat. Add 1 teaspoon of cumin seeds, 6-7 black peppercorns, and 2-3 cloves, sauté for about 20 seconds until fragrant.
  3. Introduce the prepared chicken drumsticks into the cooker, searing them on high heat for about 5 minutes.
  4. Once the chicken is slightly pale, add 1 chopped onion, 1-inch piece of ginger (grated), and 4-5 minced garlic cloves along with a handful of fresh coriander stalks.
  5. Sprinkle 2 tablespoons of gram flour (besan) into the pot, stirring continuously for another 2-3 minutes.
  6. Stir in 1 teaspoon of turmeric powder, 1 chopped carrot, and salt to taste. Pour in sufficient water, ensuring the chicken is fully covered.
  7. Lock the pressure cooker lid and cook over low heat for 2 whistles, or approximately 15-20 minutes.
  8. Carefully release the pressure manually once cooking is complete. Use a fine sieve to strain the liquid.
  9. Return the strained broth to the cooker on low heat. Add 1 cup of milk, 1 tablespoon of garam masala, chopped fresh coriander, and freshly crushed black pepper.
  10. Shred the cooked chicken and return it to the pot. Give the One Pot Chicken Shorba a good stir.
  11. Ladle the One Pot Chicken Shorba into bowls and serve hot, garnished with a squeeze of lemon or lime juice and additional chopped coriander.
