  • 1/2 unit Lemon Juice Freshly squeezed for best flavor.
  • 2 tablespoons Olive Oil Extra virgin recommended.
  • Salt Adjust to taste.

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, add the cottage cheese and the drained chickpeas. Fold them together until well combined.
  2. Add diced cucumber, halved cherry tomatoes, and chopped red onion to the bowl. Gently mix to combine.
  3. Add freshly chopped parsley and fold the ingredients together.
  4. Drizzle olive oil and squeeze lemon juice over the salad. Mix gently to coat all ingredients.
  5. Season with salt and pepper to taste, and give one last toss.
  6. Cover and chill the salad in the refrigerator for at least 15 minutes.
  7. Serve the salad cold, on its own or alongside leafy greens.
