- Grease a 12-cup muffin pan or line it with parchment liners to prevent sticking.
- In a large mixing bowl, whisk together the eggs with salt and pepper until well combined. Blend the cottage cheese until smooth and add to the bowl with the shredded cheese and desired mix-ins. Stir gently until evenly combined.
- Pour the egg mixture into the prepared muffin cups, filling each about halfway.
- Bake for 35–40 minutes. Check for doneness by inserting a toothpick; it should come out clean.
- Allow the egg bites to cool in the pan for about 10 minutes before gently removing them.
