For the Salad
  • 1 can Black Beans drained and rinsed
  • 1 can Black-Eyed Peas drained and rinsed
  • 2 medium Tomatoes seeds removed and diced
  • 1 can Corn fresh or frozen can be used
  • 1/2 cup Black Olives chopped; optional
  • 1 each Avocado cubed; add just before serving
  • 1 each Red Bell Pepper finely diced
  • 1/4 cup Red Onion adjust based on preference
  • 1/4 cup Fresh Cilantro minced
For the Dressing
  • 1/4 cup Lime Juice freshly squeezed
  • 2 tablespoons Raw Honey or agave for a vegan option
  • 1 teaspoon Chili Powder adjust to spice preference
  • 1 teaspoon Cumin
  • 1 teaspoon Kosher Salt adjust to taste
  • 1/4 cup Olive Oil

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine the drained black beans, black-eyed peas, diced tomatoes, corn, chopped black olives (if using), cubed avocado, finely diced red bell pepper, red onion, and minced cilantro. Gently stir the ingredients together.
  2. In a separate bowl, whisk together the lime juice, raw honey, chili powder, cumin, and kosher salt. Slowly drizzle in the olive oil while whisking continuously until emulsified.
  3. Pour the dressing over the salad mix and gently toss to coat all ingredients well.
  4. Serve immediately or refrigerate for later. Add avocado just before serving.
