Step-by-Step Instructions for Turkey Pumpkin White Bean Chili
- Heat 2 tablespoons of olive oil in a large Dutch Oven over medium-high heat. Add 1 diced onion and 2 chopped carrots, then sauté until they soften and the onion becomes translucent, about 5 minutes.
- Add 3 minced garlic cloves, 1 teaspoon ground coriander, 1 teaspoon smoked paprika, 1 teaspoon cumin, and ½ teaspoon ground black pepper to the pot. Stir continuously for about 1 minute to toast the spices.
- Push the sautéed vegetables to the side of the pot and add 1 pound of ground turkey. Cook until browned and no longer pink, about 8 to 10 minutes.
- Stir in 1 teaspoon of dried thyme, ½ teaspoon of salt, 1 cup of pumpkin puree, 1 can of drained cannellini beans, and 3 cups of chicken broth. Mix thoroughly and bring to a simmer over medium heat.
- Once at a simmer, reduce the heat to low, cover slightly, and cook for 25 minutes.
- Remove from heat and gently stir in ½ cup of heavy cream. Serve warm.
