Ingredients

For the Base
  • 2 lbs 99% lean ground turkey Main protein source that keeps the dish low-calorie.
  • 1 small onion, chopped Builds base flavor; substitute with shallots for a sweeter profile.
  • 3 garlic cloves, minced Provides aromatic depth; fresh is best but pre-minced can work.
  • 1 teaspoon chili powder Adds warmth and flavor; adjust amount for spiciness.
  • 1.5 tablespoons ground cumin Offers earthy, warm notes; essential to the chili flavor profile.
  • 1 teaspoon oregano Complements the spices; can substitute with Italian seasoning.
  • 2 bay leaves Imparts subtle flavor; remove before serving.
For the Chili
  • 2 cans canned white northern or navy beans Adds creaminess and fiber; can substitute with kidney beans.
  • 15 oz pumpkin puree Adds thickness and nutrition; homemade works well too.
  • 4.5 oz chopped green chiles Provides a mild kick; fresh jalapeños can be used for more heat.
  • 2 cups low sodium chicken broth Ensures soupiness; can be replaced with vegetable broth for a vegetarian option.
  • kosher salt and pepper To taste for seasoning.
For the Toppings
  • chopped cilantro/red onion/chives Adds freshness; optional but recommended.
  • Greek yogurt or low-fat sour cream Creamy texture for serving; Greek yogurt adds protein.

Method

Step-by-Step Instructions for White Bean Pumpkin Turkey Chili
  1. Heat a large skillet over high heat, spraying it lightly with olive oil. Add the 99% lean ground turkey and cook for about 5 minutes, stirring occasionally, until it’s no longer pink and turns white. Once cooked, transfer the turkey to your slow cooker or Instant Pot.
  2. In the same skillet, drizzle in ½ teaspoon of olive oil and add the chopped onion and minced garlic. Sauté for 3-4 minutes until the onion becomes translucent and fragrant. Then, stir in 1.5 tablespoons of ground cumin for an additional minute.
  3. In your slow cooker or Instant Pot, combine the sautéed onion and garlic mix with the rinsed white northern beans, 15 oz can of pumpkin puree, 4.5 oz can of chopped green chiles, and 2 cups of low sodium chicken broth. Season with 1 teaspoon of chili powder, 1 teaspoon of oregano, and tuck in 2 bay leaves.
  4. For the slow cooker, cover and cook on high for 4 hours or on low for 8 hours. If you're using an Instant Pot, cover and cook on high pressure for 25 minutes.
  5. Once cooked, remove the bay leaves from the chili and give it a good stir. Taste and adjust salt and pepper to your preference. Serve hot, garnished with fresh cilantro, red onion, or chives, alongside Greek yogurt or low-fat sour cream.
