- Combine goat cheese and cream cheese in a mixing bowl. Beat with an electric mixer on medium speed for about 2 minutes until smooth and fluffy. Add honey and optional cinnamon, blending for 1 more minute.
- On parchment paper, spread pecan chips, chopped dried cranberries, and chopped fresh parsley. Mix gently with a spatula until evenly distributed.
- Using a cookie scoop, shape the cheese mixture into bite-sized balls. Roll in the cranberry-pecan mixture until fully coated.
- Place the truffles on a plate and refrigerate for at least 1 hour to firm up.
- Before serving, drizzle with honey and arrange on a serving platter.
