Method
 

Preparation
  1. Wash the spinach thoroughly. Remove tough stems and set aside to drain.
  2. In a large pot, bring two inches of water to a boil, add spinach, and submerge for 2-3 minutes until wilted.
  3. Drain spinach in a colander, pressing gently to remove excess moisture.
Cooking
  1. Melt the butter in a large skillet over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  2. Pour in heavy cream and bring to a gentle simmer, stirring occasionally for 3-4 minutes.
  3. Reduce heat to low and fold in the wilted spinach. Add Parmesan, nutmeg, salt, and pepper. Stir gently for 3-5 minutes until the cheese is melted.
Serving
  1. Taste and adjust seasoning if needed. Transfer to a serving dish and sprinkle with additional parmesan.
