Step-by-Step Instructions

  2. Combine graham cracker crumbs, sugar, and melted unsalted butter in a bowl and press into the pan. Bake for 10 minutes.
  3. Beat cream cheese and sugar in a bowl until smooth, then add eggs one at a time, followed by vanilla extract and ground cinnamon.
  4. Peel and core apples; toss with lemon juice, sugar, and cinnamon. Place evenly over cheesecake filling.
  5. Mix flour, oats, brown sugar, and a pinch of cinnamon; mix in chilled butter until crumbly. Sprinkle over apples.
  6. Bake for 60 to 70 minutes until edges are golden and center jiggles slightly.
  7. Cool in the oven for 1 hour with the door ajar, then cool completely at room temperature.
