Ingredients

Base Ingredients
  • 1 ½ cups Gluten-Free Old-Fashioned Oats Form the foundation and bulk of the dish; rolled oats can be used for a different texture.
  • 1 tablespoon Chia Seeds Boosts fiber content and helps thicken the mixture; no direct substitute recommended.
  • 1 tablespoon Ground Flaxseed Provides healthy fats and additional fiber; can be replaced with extra chia seeds if desired.
  • ¼ teaspoon Salt Enhances the overall flavor; can be omitted if a salt-free option is preferred.
Liquid Mixture
  • 1 ½ cups Unsweetened Almond Milk Acts as the creamy base; feel free to swap it for any plant milk like soy or oat.
  • 2 tablespoons Natural Creamy Almond Butter Adds a lovely creaminess and nutty flavor; cashew butter makes a great alternative.
  • 2 tablespoons 100% Pure Maple Syrup This natural sweetener gives a delightful touch; honey can be a substitute if you're not keeping it vegan.
  • 1 teaspoon Pure Vanilla Extract Essential for that cake-like essence; imitation vanilla works if needed.
  • ½ teaspoon Pure Almond Extract Intensifies the cake flavor; if unavailable, use additional vanilla extract.
Fun Twist
  • 3 tablespoons Sprinkles Adds color and fun; opt for rainbow Jimmies for the best visual appeal.
Optional Toppings
  • Coconut Whipped Cream Adds an extra layer of indulgence to your serving.
  • Additional Sprinkles For those who just can't get enough fun!
  • Fresh Berries A bright and delicious addition that pairs wonderfully with the oats.

Method

Instructions
  1. In a large mixing bowl, combine 1½ cups of gluten-free old-fashioned oats, 1 tablespoon of chia seeds, 1 tablespoon of ground flaxseed, and ¼ teaspoon of salt. Stir until evenly distributed.
  2. Pour in 1½ cups of unsweetened almond milk, followed by 2 tablespoons of natural creamy almond butter, 2 tablespoons of pure maple syrup, 1 teaspoon of pure vanilla extract, and ½ teaspoon of pure almond extract. Whisk until smooth.
  3. Cover the bowl tightly with plastic wrap or transfer to individual jars. Refrigerate for a minimum of 4 hours or overnight.
  4. Once set, gently fold in 3 tablespoons of colorful sprinkles using a spatula, mixing lightly to avoid breaking the sprinkles.
  5. Spoon the oats into bowls or jars for serving. Top with coconut whipped cream, extra sprinkles, and fresh berries if desired.

Notes

For the best texture, let the oats chill overnight. Use airtight containers for leftovers, and they'll stay fresh for up to 3 days. Add toppings just before serving to maintain freshness.
