Preparation Steps
  1. In a food processor, combine cottage cheese, Dijon mustard, onion powder, garlic powder, salt, and black pepper. Pulse until creamy and smooth.
  2. Chop the rotisserie chicken into bite-sized pieces and add to a mixing bowl.
  3. Add diced banana peppers, diced celery, diced red onion, and sliced green onion to the chicken.
  4. Pour the creamy cottage cheese mixture into the bowl with chicken and vegetables. Gently fold to combine.
  5. Taste and adjust seasoning with salt and black pepper as desired. Optionally, add a splash of lemon juice.
  6. Serve immediately or store in an airtight container in the fridge for up to 3-4 days.
