Step-by-Step Instructions for Garlic Mushroom Pasta
- Bring a large pot of salted water to a rolling boil over high heat. Add pasta and cook according to package instructions until al dente, about 8-10 minutes. Reserve a cup of pasta water, drain, and set aside.
- In a large skillet, heat olive oil and butter over medium-high heat. Add onions and mushrooms, and sauté for 8-10 minutes until mushrooms are golden brown.
- Stir in remaining butter, garlic, and Dijon mustard. Sauté for an additional minute until garlic is fragrant.
- Pour in broth and lemon juice/ zest. Increase heat and let bubble for about 1 minute to create a sauce.
- Remove from heat. Mix in Parmesan cheese and parsley until the cheese melts. Adjust sauce with reserved pasta water as needed.
- Season with salt and pepper to taste. Serve immediately, garnished with parsley and extra Parmesan if desired.
