Step-by-Step Instructions for Irish Beer Cheese Dip
- In a medium saucepan, set over medium heat, melt 2 tablespoons of unsalted butter until it begins to bubble.
- Once the butter has melted, add 2 tablespoons of all-purpose flour and 2 finely minced garlic cloves to the saucepan. Stir constantly for about 1 minute until you form a smooth roux.
- Stir in 1/2 teaspoon of cayenne pepper, 1 teaspoon of onion powder, and 1 teaspoon of smoked paprika into the roux. Cook this for about 30 seconds.
- Gradually whisk in 1 cup of whole milk and 1 cup of Guinness. Continue to cook while stirring for about 5 minutes.
