Method
 

Preparation
  1. Preheat the oven to 375°F (190°C) and prepare poblano peppers by slicing them in half and removing seeds. Toss with olive oil, salt, and pepper.
  2. Place seasoned poblano halves and onion on a baking sheet skin-side up and roast for approximately 30 minutes.
  3. After roasting, transfer the peppers and onions to a sealed container for about 10 minutes to steam.
  4. In a skillet, melt butter over medium-high heat and whisk in flour to create a roux, stirring constantly for 2-3 minutes.
  5. Slowly add chicken broth while whisking to avoid lumps, and simmer for 5-10 minutes until thickened.
  6. Blend the roasted peppers, onion, sour cream, garlic, cumin, and roux until smooth.
  7. Taste and adjust seasoning with salt and pepper before serving over your favorite dishes.
  8. Enjoy your Poblano Cream Sauce as a drizzle or dip.
