For the Pasta
  • 8 oz Penne Pasta or spaghetti/gluten-free alternatives
For the Chicken
  • 1 lb Chicken Breasts thinly sliced
For the Sauce
  • 1-2 tbsp Olive Oil butter can be substituted
  • 2 cloves Garlic minced; garlic powder is an option
  • 15 oz Ricotta Cheese or cottage/cream cheese
  • 0.5 cup Heavy Cream or half-and-half
  • 0.5 cup Grated Parmesan Cheese or nutritional yeast
For the Flavor
  • 1 tsp Dried Italian Herbs or fresh herbs if available
  • 1 tsp Chili Flakes to taste
  • 1 tsp Salt
  • 1 tsp Black Pepper
For Garnish
  • 2 tbsp Fresh Parsley chopped; or substitute with basil/chives

Method
 

Cooking Instructions
  1. Boil a large pot of salted water. Add the penne pasta; cook according to package instructions (about 10 minutes) until al dente.
  2. Heat 1-2 tablespoons of olive oil in a skillet over medium heat. Sauté thinly sliced chicken for 5-7 minutes until golden brown.
  3. Lower the heat and add minced garlic; sauté for about 1 minute until fragrant.
  4. Add ricotta cheese, heavy cream, and grated Parmesan to the skillet; stir continuously for 2-3 minutes until smooth.
  5. Return sautéed chicken to the skillet. Add dried Italian herbs and chili flakes; stir to coat the chicken.
  6. Add the cooked penne pasta to the skillet. Toss everything together for 1-2 minutes until heated through.
  7. Divide the pasta onto plates and garnish with chopped parsley and a sprinkle of extra Parmesan. Serve hot.
