- Preheat your oven to 500°F (260°C). Prepare a baking sheet lined with parchment paper.
- Place the whole red bell peppers onto your baking sheet in a single layer. Roast for 20-30 minutes, turning occasionally until the skins are darkened and blistered.
- Once roasted, cover with aluminum foil and let steam for about 10 minutes.
- Heat olive oil in a large saucepan over medium heat, add diced onions and minced garlic, sauté for about 7 minutes until softened.
- Lower the heat and stir in fat-free half & half and goat cheese, stirring until melted.
- Once cooled, peel the skins off the roasted peppers, discard stems and seeds, and chop into bite-sized pieces. Add to the sauce along with Parmigiano Reggiano.
- Blend the sauce using an immersion blender until desired consistency is reached.
- Return sauce to low heat, toss in cooked linguine, and mix until evenly coated.
- Plate the Alfredo immediately, garnishing with extra parmesan, freshly ground pepper, and parsley.
