- Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- Wash and quarter ripe tomatoes, arrange them on the baking sheet with whole garlic cloves. Drizzle with olive oil and season with salt and pepper.
- Roast in the oven for about 1 hour until tomatoes are soft and caramelized.
- Heat olive oil in a Dutch oven, add diced onion, and sauté for 5-7 minutes until soft.
- Add dried basil and oregano, stir for 1-2 minutes, then deglaze with balsamic vinegar.
- Add vegetable broth and fresh thyme, bring to a gentle simmer for about 10 minutes.
- Squeeze out the roasted garlic cloves and add roasted tomatoes and garlic to the Dutch oven. Blend until smooth.
- Stir in heavy cream or coconut milk and simmer for a couple more minutes to heat through.
- Ladle soup into bowls and garnish with fresh basil leaves before serving.
