Method
 

Step‑by‑Step Instructions
  1. Melt 2 tablespoons of unsalted butter in a large sauté pan over medium-high heat. Add 2 minced garlic cloves and a pinch of salt, stirring for about 1 minute until fragrant.
  2. Reduce heat to medium, pour in 1 cup of heavy cream, and stir. Simmer for 2-3 minutes until thickened, then stir in ½ cup of grated Parmesan until melted.
  3. Cook 8 ounces of fettuccine in salted boiling water for 8-10 minutes until al dente. Reserve ½ cup pasta water, drain the rest.
  4. Add the drained fettuccine to the sauté pan with the sauce. Toss gently, adding reserved pasta water to achieve desired consistency.
  5. Flake 4 ounces of smoked salmon and fold it into the pasta mixture.
  6. Sprinkle 2 tablespoons of capers over the pasta and gently stir. Garnish with black pepper, more Parmesan, and fresh basil leaves.
