Ingredients
  

For the Pasta
  • 8 ounces Spaghetti Whole wheat or gluten-free optional
For the Sauce
  • 1 cup Heavy Cream Can substitute with half-and-half or coconut cream
  • 2 tablespoons Olive Oil Avocado oil is a good alternative
  • 3 cloves Garlic Minced
  • 1/2 cup Parmesan Cheese Grated, can substitute with vegan cheese
  • 1/2 teaspoon Red Pepper Flakes Optional for spice
  • to taste Salt and Pepper For seasoning
For the Veggies
  • 4 cups Fresh Spinach Can use kale or Swiss chard
  • 1/2 cup Sun-Dried Tomatoes Chopped, marinated varieties are great
For Garnish
  • 1/4 cup Fresh Basil Chopped, can use parsley if basil isn't available

Method
 

Cooking Instructions
  1. Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant and golden.
  3. Stir in fresh spinach and sun-dried tomatoes, cooking until spinach wilts.
  4. Reduce heat to low and pour in heavy cream, stirring gently for 2-3 minutes.
  5. Add grated Parmesan, red pepper flakes, salt, and pepper. Stir until the cheese melts.
  6. Toss the reserved spaghetti in the skillet, coating with sauce. Cook for 1 minute.
  7. Serve hot, garnished with fresh basil.
